Mug Cake

I get such a massive kick out of my evening coffee ritual that it’s not funny. And I don’t mean the caffeine. The entire process – brewing, smelling the aroma wafting through the kitchen, stirring in milk, wrapping my fingers around that warm brown mug (yes, I do have a favorite mug. Coffee just doesn’t taste the same in anything else) and finally sipping the hot frothy concoction – is something I look forward to from the moment I wake up in the morning.

Could this experience be topped? I didn’t think so. Not until a friend shared an amazing mug cake recipe so enticing that I willingly gave up my coffee mug to conduct this experiment.

I call this an experiment because it took me three trials to get it right. I admit I did try altering the proportions a wee bit. But it was all worth it!

There are quite a few recipes floating around but I found this one from Sinamontales easiest to work with.

You need:
  • 2 tbsp All purpose flour
  • 2 tbsp Granulated sugar
  • 1/2 an Egg Whisk 1 egg in a measuring cup and use half the quantity
  • 1.5 tbsp Cocoa powder 
  • 1 tbsp Nutella
  • 2 tbsp Milk
  • 1.5 tbsp Oil
  • A couple of drops of vanilla essence
  • 1/4 tsp Baking powder
  • 1 tsp Brewed coffee You can also use instant coffee granules. Just mix 0.5 tsp in with the milk before using
  • A mug, a small bowl and a whisk

This couldn’t get simpler: Take bowl, dump ingredients into it,whisk and pour into mug!

Go ahead, lick the batter off the whisk 😉 

Make sure the batter is smooth. At this stage you can add some chocolate chips, just to make things more interesting.

    Pour it out into your favorite coffee (or tea) mug and microwave for exactly 1 minute 30 seconds. I have a 750W microwave which I used at full blast. Do keep an eye on the cake while baking. The difference between a moist, fudgy cake and a burnt, dry one is literally a few seconds. Ask me, I’ve burnt my fair share of mug cakes. As with any baking…follow your nose. It’ll tell you when you’re done.

    Dust with powdered sugar and mmmmm……you’re in heaven 🙂
    Double the recipe if you want to make two of these. They are best when eaten immediately.
